Why a Small Menu Wins

A small, profitable menu is usually easier to execute from a food truck than trying to operate a 40-item restaurant on wheels. Limited menus reduce prep complexity, lower food-cost waste, speed up service times, and allow the team to execute every item consistently under pressure. A focused menu also makes purchasing, storage, and inventory far more manageable in a confined space. Master a few items before expanding.
